You can enjoy a gluten-free diet in Costa Rica, but expect a challenge. The key is informing the wait staff every time you order. You must say "sin gluten", pronounced "seen glooten" or "libre de gluten", pronounced "leebray day glooten".
Most tours offer fresh fruit in place of meals on request. Few will offer gluten free plates. Most hotel restuarants will cook to order if asked on the spot. Few will accept advance requests.
